To prepare the traditional dish of Berkouche with meat:
Put the meat in a casserole, add oil, salt, pepper, ginger, saffron, onion and tomatoes.
Add one liter and half of water, cover and leave for a few minutes then add Berkouche to the mixture with some vegetables and leave for another 35 minutes .
Add the tomato concentrate, coriander and parsley.
